There are many kinds of Sushi and made right by a Master it is a delicacy to be enjoyed. Mitutani is a Master at making Sushi and we get to see the master at work.
You will not  believe how complicated making Sushi is. Getting the right ingredients, the right tools, and preparing it just right. It takes a master to make a masterpiece. Mitutani is a traditionalist.
Okada is a sushi chef and he is a modern one. This is a way for sushi to be available to more people as it costs less. Rice we see is an important part of making sushi. As is saki which you drink as you eat sushi.
